The Twice Baked Baking Company in Long Beach is a gluten-free bakery with an artisan touch that opened this summer by the mother-daughter team of Judy Karni and Dahlia Villegas (pictured). Their goodies include biscotti, cookies/bars, muffins, coffee and bundt cakes, cheesecakes, pies, tarts, sweet rolls, cupcakes, quiche and classic cakes. Twice Baked Baking Company is located in the TJ Max shopping center at 8185 E. Wardlow Road in Long Beach. They can be reached at 562-343-5715. Store hours are Tuesday through Friday at 11 a.m. to 6 p.m., and weekends from 10 a.m. to 4 p.m.
